Classic Roast Beef Recipe

Ingredients

  • Beef roast: ~1.5 kg (e.g., top sirloin, ribeye, or tenderloin)
  • Olive oil: 2 tbsp
  • Garlic: 4 cloves, minced
  • Rosemary: 2 tsp (fresh, chopped)
  • Thyme: 2 tsp (fresh, chopped)
  • Salt: 1 1/2 tsp
  • Black pepper: 1 tsp
  • Onions: 2, quartered
  • Carrots: 2, cut into chunks
  • Potatoes: 3 medium, quartered (optional, for sides)

Instructions

  1. Prepare the beef:
    • Preheat your oven to 425°F (220°C).
    • Pat the beef roast dry with paper towels. Rub it all over with olive oil, garlic, rosemary, thyme, salt, and black pepper.
  2. Prepare the vegetables:
    • Toss onions, carrots, and potatoes (if using) in a drizzle of olive oil, salt, and pepper. Arrange them in a roasting pan.
  3. Roast the beef:
    • Place the beef on a rack in the roasting pan, with vegetables around it. Roast at 425°F for 15 minutes, then lower the temperature to 350°F (175°C).
    • Continue roasting for 1-1.5 hours, or until the internal temperature reaches:
      • 125°F (52°C) for rare
      • 135°F (57°C) for medium-rare
      • 145°F (63°C) for medium
  4. Rest and serve:
    • Remove the beef from the oven and let it rest for 15-20 minutes to retain juices. Slice thinly and serve with the roasted vegetables.
